I hate to brag, but I have to tell you: these muffins are delicious.  I should make them more often, but since they have cranberries in them, I save them for fall and winter.  I’m thinking that’s a problem.  Note to self: Make these muffins ALL year.

The cream cheese doesn’t give them a cream cheesy flavor, but boy does it make them soft and extra awesome.  The bit of orange complements the cranberries perfectly.  Munchie loves them as a snack and my husband eats them for breakfast and dessert.  I can’t blame him.  😉

Serves: 20-22 muffins
Ingredients
  • 2 cups all purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup butter, room temperature
  • 8 oz. cream cheese, softened/room temperature
  • 1 and ⅓ cups sugar
  • 4 eggs
  • 1½ teaspoons vanilla extract
  • 1 tsp. orange zest
  • 2 Tbsp. orange juice
  • 1 cup dried cranberries
  • Simple Glaze:
  • 1 cup powdered sugar
  • 2 Tbsp. orange juice
  • milk; start with just a teaspoon or 2
Instructions
  1. Preheat oven to 350°. Grease muffin tins or place paper muffin cup liners in tins. Mix flour, baking powder, and salt in a medium bowl. Set aside. In a large bowl use a hand mixer to cream the butter, cream cheese, and sugar until combined well (about 2 minutes). Next, add the eggs one at time. Be sure to mix in each egg before adding the next one. Mix in the vanilla, orange zest, and orange juice. Add the flour mixture to the butter mixture and mix just until combined. Fold in the cranberries. Fill muffin cups and bake for 20 minutes or until a toothpick inserted in center comes out clean. Cool in pans for a few minutes then remove from tins and cool on a wire rack. Glaze each muffin with about a teaspoon of glaze while they're still warm.
  2. Orange Glaze: Mix powdered sugar with orange juice. Add milk (start with just a teaspoon) until you get desired consistency. I only use about 1-2 teaspoons. *If you need, microwave the glaze for about 15 seconds to smooth it out.
