I know.  This is just excessive and unnecessary.  But I did it so I’m sharing it.  Because you might need this in your life soon and I’m here to tell you not to be ashamed.  I’m not.

I don’t think there’s anything else to say.

Grasshopper Brownie Ice Cream Pie

Ingredients
  • 1 box brownie mix PLUS ingredients called for on the box (I use Ghiradelli's )
  • ¼ teaspoon espresso powder ( I use King Arthur's)
  • 1 container mint chocolate chip ice cream, softened (so it is easy to spread; I let mine sit out about 10 to 15 minutes )
  • 1 jar hot fudge sauce (the small jar that is about 12.5-15 oz. usually)
  • ¾ cup mini chocolate chips
  • Whipped cream for serving; optional
  • Chocolate syrup for serving; optional
Instructions
  1. Preheat oven to temperature called for on your brownie mix. Spray a pie plate ( a deep dish pie plate works well for this) with Baker's Joy. Set aside. Prepare brownie batter according to package directions. Add espresso powder to batter and mix well. Spread evenly in prepared pie plate and bake for the baking time listed for an 8x8-in. pan. Let cool for about 5 minutes.
  2. Using a rubber spatula or something similar, press center of brownie down to make room for the ice cream. Let cool completely. Spread softened ice cream evenly over brownie crust (I usually have a cup or 2 of ice cream left over). Freeze for about an hour.
  3. Warm hot fudge sauce just until easier to pour (about 20 -30 seconds) and pour over ice cream. Sprinkle mini chocolate chips all over. Place back in the freezer for a couple of hours or until ready to serve. Once frozen, cover if serving later. Take out of freezer and let sit about 5 minutes before cutting and serving. Top each serving with whipped cream and chocolate sauce if you wish. Enjoy!

  1. That looks absolutely amazing!!! Tonight we are having BLUE cupcakes with white icing and blue sprinkles for A’s birthday (Frozen theme) but I would MUCH rather be eating this!!! Yum! You are amazing!
