I’m back with another very easy meal idea. It seems most people have their own pulled pork recipe, but I figure it doesn’t hurt to share what works for me. A couple of people who watch my grocery hauls asked me to share some easy week night meals so this one fits that bill perfectly. Adjust the sauce according to your taste–need more? Go for it! Like more seasoning? Add your favorites to the roast before adding the root beer. It’s all easy and all good.

- 3 to 4 lb. pork roast
- freshly ground black pepper
- 1 can root beer (12 oz.)
- 1 jar/18 oz of BBQ sauce or 2 to 2.5 cups homemade BBQ sauce (I use Sweet Baby Ray's)
- Buns for serving
- Lightly spray/grease your slow cooker pot. Trim the roast of a bit of excess fat (not all of it!). Place the roast in the pot and pepper it, pressing the pepper into the roast. In a bowl, mix the root beer and about ⅓ cup of BBQ sauce. Pour over and around the roast. Cover and cook on low for 6 hours (slow cookers vary so check your roast in 6-8 hour on low range). Drain liquid from slow cooker and shred the roast right in the slow cooker if you like. I like to keep a few tablespoons of the liquid in with the meat. Mix in the remaining bbq sauce and let heat/cook for another 15 to 30 minutes. Add/serve with extra BBQ sauce if you desire. Enjoy!
