This is one of the easiest dishes I make.  It really is so stinkin’ easy.  But after a few hours in the slow cooker, you have tasty shredded chicken ready to serve up however you like!  We love them with corn tortillas, but you decide.  This chicken makes a great loaded nachos topping as well as a yummy burrito filling.  I like them street taco-style, but as I said, enjoy them however you like!

Slow Cooker Shredded Chicken
Recipe type: Entree/Dinner
  • 2 to 3 lbs. chicken breasts or chicken thighs (fat trimmed)
  • 2 to 3 cloves garlic, minced
  • 1 packet dry ranch dressing mix mixed with ½ cup of water (you can make your own healthier dry ranch dressing mix)
  • 1 Tbsp. chili powder
  • 1 Tbsp. ground cumin (do 1 Tbsp)
  • 1 cup of your favorite Italian dressing (I make my own, but use your favorite)
  1. Place chicken breasts in your slow cooker. Mix all other ingredients together until combined and pour over chicken. Cook on high for about 5 hours (or low for 7 to 8 hours)--Slow cookers vary when it comes to cook time so please check on this periodically and adjust cook time accordingly. Halfway through cooking time, flip the chicken. When done cooking, shred chicken easily with tongs or a fork and mix back in sauce before serving. Use for tacos, burritos, tostadas, etc.

      1. Ahhh! I finally tried this and it was AMAZING! So, so, so easy that even I didn’t mess it up! I had every intent on checking on it but I took a rare nap and woke up right around the 5 hour mark to a yummy smell and the excitement that dinner was almost ready 😉 I was worried it would be dry since I never checked on it but it literally fell apart (easiest “shredding” I have ever done) and was delicious. The entire family gobbled it up! Thank you for supplying a new (and easy) dinner item to our rotation!

  1. Could you tell me how big your crock pot is? I am trying to figure out if 3 pounds of chicken will overwhelm mine. But I love the idea of making a lot and freezing it! Great recipe, found you on Pinterest. 🙂

    1. Hi Laura! I believe mine is a 6 quart (it’s an oval one). I know people have issues with not filling up a large slow cooker (burning and such), but for some reason I don’t have that issue with mine. However, I do sometimes load mine up, as you mentioned, and have extra for multiple meals. Hope that helps and hope you enjoy! Thank you for visiting. 🙂
